These days, from the early morning, fermented pork roll makers in Nguyen Trung Truc Street, Ninh Hiep Ward, Ninh Hoa start work. Each producer like ba Tư, My Duyen, My Trang, My Tri, Hang Mo, etc. gather tens of makers working without respite. 
 
Nguyen Thanh Hang, the owner of Hang Mo, said that the second half of the last lunar month is the peak time of production in the village. In normal days, her business make about 50 kilograms of pork, the figure has increased two or three times. A kilogram of fermented pork roll is selling at VND110,000 – VND120,000. The price may rise by VND20,000 – VND30,000/kg when Tet comes nearer.
 
At present, Ninh Hoa Township has about 20 fermented spring roll producers, mainly in Ninh Hiep Ward and Ninh Sim Commune. In recent years, Quyet Thang bus running on Nha Trang – Ninh Hoa – Van Ninh route has made the producers’ shipping easier.

Stone mortars sell well
 
Coming to house of Huynh Hien, a stone mortar maker in Ninh Giang Ward, we saw him and his children were working hard. He said, “Normally, we make about 20 stone mortars a day. The figure may rise to 30 in the days near Tet. We get more orders from sellers who stock up for sale after Tet. Our mortars are sold to many places, even to Hanoi.”
 
Le Van Hung, another stone mortar maker, said, “We produce stone mortars all year round, but more on the occasion of Tet. I produce about 10 mortars normally and 13 – 15 ones these days. They are always sold out. Making stone mortars is hard and harmful to healthy, so we can produce more.”
 
20 years ago, the whole village has more than 60 families producing stone mortars and mills. Big mortars and mills mostly not used anymore and the exhaustion of materials have curtailed the market. The stone mortar village now has only 7 producers. Stone to produce mortars is taken from Sam mountain right in the village. A stone mortar is selling from VND25,000  to VND100,000, depending on its size.
