The two varieties are available in Nha Trang City. Quang mi quang has thick, smooth soft rice noodles served with pork or chicken and especially with grilled rice paper while Nha Trang mi quang noodles are thin and yellow served with boiled pork and grilled fish cakes.
Dry noodles are first soaked in boiling water, put into a bowl plus with some pieces of grilled fish cakes, slices of boiled meat or pig’s feet, and then broth made by simmering pork bones. Onion leves, charred onions, roasted peanuts and spices are finally added to the soup by the dinners. The ingredients vary in Quang mi quang and Nha Trang mi quang, but peanut is the most commonly found in mi quang making the dish special, distinguishable from other kinds of noodles.
Nha Trang mi quang is popular in Nha Trang City, in both small restaurants and deluxe ones. Nha Trang mi quang is served with chili pepper, fresh vegetables, bean sprouts Vietnamese coriander and shaved banana flower. It costs VND10,000-15,000/bowl. Not only Nha Trang residents but also tourists like Nha Trang mi quang.
Quang Mi quang is less popular in Nha Trang City. Some small restaurants serving Quang Mi quang include 126 Hong Bang, Thuy Cat at 10 Tran Van On, etc. Each restaurant has its own cooking style from the same recipe. Mi quang is best served hot.
The two mi quang variations are delicious, each with different appetizing taste adding to the specialties of Khanh Hoa.
